SUBLYME RECIPES for SEA FOOD

Marinated mackerel
serves 4

ingredients
4 whole mackerel
4 tbsp chopped marjoram
2 tbsp finest olive oil
finely grated ring and juice of 1 lime
2 cloves garlic
salt and pepper

Scrape scales from mackerell using the blunt side of a knife, gut and rinse. You may prefer to remove the head before cooking. Using a sharp knife make 4 - 5 diagonal slashes on each side of the fish and place the fish in a shallow dish.

Make the marinade by mixing together the marjoram, olive oil, lime rind and juice, crushed garlic, salt & pepper. pour this mixture over the mackerell and leave to marinate in a fridge for at least 30 minutes.

Cook the mackerell under a preheated grill for 5 - 6 minutes on each side, brushing occasionally with the reserved marinade, until golden.

Transfer the fish to serving plates, pouring on remaining marinade before serving.
