SUBLYME RECIPES for SEA FOOD

MUSSELS WITH GARLIC STUFFING
(Serves 4)

Ingredients

¨       4 pints of mussels
¨       4 oz butter
¨       1 tablespoon fresh lemon juice
¨       1 tablespoon chopped parsley
¨       3 crushed cloves of garlic
¨       Salt and freshly milled black pepper

Pre-heat an oven to 230o C

Place the cleaned de-bearded mussels in a wide saucepan, cover and cook over a low heat (do not add any liquid) until they open.

Remove and discard all empty ½ shells and un-opened mussels.

Arrange the opened mussels in 4 ovenproof dishes.

In a basin combine the butter, lemon juice, parsley and garlic, season with salt and pepper and mix together well.

Place a small amount of the mix in each mussel, put the dishes on the top shelf of the oven and cook for 5  10 mins.

Serve while still bubbling to the table.
