ZEELAND FRIED MUSSELS

Wash, scrub clean and de-beard the mussels.

Cut the hinge on each mussels with a sharp knife, so that the two shells can be opened by sliding the knife between them..

Carefully remove the raw mussels with a fork and drain and dry on kitchen paper or a tea-towel.

Place each mussel in flour seasoned with freshly ground salt and pepper and turn to coat thoroughly.

Brown some melted butter in a frying pan with a little finely chopped onion.

Place the mussels into the butter and sprinkle with more freshly ground black pepper. Fry quickly so as not to toughen the mussels.

Serve with lemon juice and fresh French bread.
