Baked Scallops

(serves 2)

Ingredients

·       8 - 10 scallops with their shells
·       Salt
·       Freshly ground black peper
·       100 g butter
·       Chopped parsley
·       4 tablespoons fresh breadcrumbs

Chop the white muscle coarsely, leaving the coral whole. Use 4 of the rounded half of the shell and clean thoroughly. Divide the chopped scallop, coral and parsley between the 4 shells and season. Dot with half of the butter.

Sprinkle the breadcrumbs over the contents of the shells and dot the remaining butter on top.

Cook in the middle of a pre-heated oven (180o C) for about 15 mins, or until the top is crispy and the scallops cooked.
