RAW SCALLOPS IN LEMON JUICE

Ingredients

·       Fresh scallops well cleaned
·       Fresh lemon juice
·       Salt & pepper

Place scallops in a bowl and cover with plenty of freshly squeezed lemon juice. Add freshly ground salt and pepper and stir thoroughly.

Leave for 3 to 4 hours while the lemon juice pickles or cooks the scallops.

Remove from the lemon juice and eat with freshly baked French bread and white wine.
