scallop kebabs

Ingredients
Fresh scallops - 4 to 6 per person
Rind less streaky bacon - 1 slice per 2 scallops

Olive oil
Finely chopped fresh herbs
Garlic
Fresh squeezed juice from whole lemon & lemon wedges
Salt & pepper

Mix salt, pepper, crushed garlic, chopped fresh herbs, lemon juice and olive oil in a bowl and place cleaned scallops in this mixture, stir and marinade for at least an hour in the cool.

Place one clean prepared whole scallop on each end of bacon and roll around the scallop towards the centre to form figure of 8.

Skewer right through both with a wooden skewer, adding a lemon wedge to one end.

Now Bar-B-Q over a very hot charcoal base until the bacon has crisped on the outside but DO NOT over cook, the scallops must be moist and juicy in the centre.

Eat with fresh salad, boiled new potatoes in mint and butter and a suitable good chilled white wine.
